51th National Truffle Fair of Acqualagna, 30th-31st October and 1st-5th-6th-12th-13th November 2016, Acqualagna.
Its centuries-old tradition of research, production and sale of the truffle has made Acqualagna a privileged meeting place for the promotion and trade of the tuber at both national and international levels. Acqualagna is the harvest centre of two-thirds of the entire national production of the precious tuber with around 600 kilos of truffle of every kind.
The entire town of Acqualagna offers its spaces to the event. The main square hosts the stands of fresh truffle dealers, and this is the traditional hub of the festival. The Palatartufo is the most important area of reception for the visitors to the fair who number over 200.000 in total. Walking around its 4.000 square metres, lovers of the food and wine culture can taste and buy the best that traditional Italian cuisine has to offer: products tied to the characteristic truffle of the area, the numerous delicious products and examples of food from other Italian regions. In addition, visitors can see the area dedicated to local handicraft of furniture making and the famous artistic working of the stone.
THE TASTE PARLOUR and COOKING SHOW “The Truffle encounters the Italian Regions”
This is the pride and joy of the event. Guided tastings, a cooking show with the greatest chefs, contests in the kitchen among VIPs and presentations of the “books to savour”. The Salotto da Gustare (“taste parlour”) is like a theatre in which the centre stage is a designer Aster kitchen, and in the stalls there is a Guzzini set table and behind the scenes there are the chefs and flavours of the truffle. During the days of the Fair “The Truffle meets the Italian Regions” with a cooking show which will marry the taste of the Acqualagna Truffle to the wine and gastronomic excellence of our Belpaese.

Acqualagna’s Truffle Fair excels also for its side events. In fact many exhibitions, conventions, presentation of products and successful events are organised.
THE PALAZZO DEL GUSTO (THE PALACE OF TASTE)
Next to the Salotto is the Palace of Taste, an ancient dwelling restored and inaugurated last year as the place offering Food and History, Art and Traditions. Here there are eductors for companies and food and wine tasting leading to certification as well as the presentation of products. There are themed evenings for guided tastings. From here leave the Itineraries of Taste which redesign the boundaries of the territory as the Gastronomic Republic of Acqualagna, suggesting the best places to savour the wine and gastronomic specialities of the region, thereby overturning the typical concept of a holiday in which food is not such an important feature, but becomes the most significant part. The Palazzo del Gusto will be a showcase for the excellence the territory has to offer with particular attention paid to winemaking and the best brands of local provincial and regional beers. Indeed thanks to the collaboration between IMT (the Marchegian Institute for the Protection of Wines) and the Association Apecchio Città della Birra, a variety of wines and beers will be offered in combination with the typical flavours of the Beautiful Province. Such products inevitably include the product quality label oil from Cartoceto, ham from Carpegna, Casciotta cheese from Urbino, cured meats from Nino and of course the distinguished black and white truffle from Acqualagna. During the fair wine and beer producers will present the best brands and wine stewards and food gourmets will describe their special features and characteristics.
